Will you mamas please share some of your meal/snack ideas?

I'm already doing SCD and now have to do anti-candida as well. I'm not a big fan of raw veggies but I also don't want to cook EVERY single meal AND snack yk?

Feeling a little overwhelmed here. Any ideas would be greatly appreciated!

Hi Annikate - I am in the process of transitioning from SCD to Bee's anti-candida diet. Here is a recipe that came with my coconut oil. I made it already and it was good. You just have to leave off the cheese

Coconut Oil Fritatta

4 eggs, whisked
1 tsp. Italian herbs
Salt to taste
2 Tbsp Coconut Oil
½ an onion chopped
1 clove garlic minced
3 asparagus spears chopped
½ cup parmesan cheese

In a deep skillet, heat coconut oil over medium heat. Add onions and garlic and sauté until transparent. Add eggs, salt and Italian herbs. Stir briefly, add asparagus and cover for 1 minute. Add parmesan and cover again until cheese is melted. Serve in slices.

I am subscribing to this thread because, geez, it's awfully hard to come up with food ideas, especially for portable snacks. I have seen people list broth, hard boiled eggs or the egg drink. Ummm, not exactly what I am used to for snacks, kwim? What about cucumber slices with some sea salt? Red/green pepper strips? After that, I feel a little lost.

Snacks on anti-candida - what's that? :LOL A spoonful of coconut oil, some celery, and a boiled egg. A green salad with lemon juice and olive oil. Steamed chicken. Sauteed chicken liver.

Ok...so I haven't started yet...I'm going to as soon as I can figure all of this out
: So maybe take my ideas with a grain of salt. I'm not a pro
Seems like most of us can figure out meals a little better than snacks. Here's some ideas of mine:

carrot sticks
hard boiled eggs
celery
yogurt (homemade...allowed, no?)
crispy nuts (made NT style)
veggie juice (I've been having this...you need to get used to the taste)

ok...I'm out of ideas and the list is not that impressive
: Can anyone say "lose weight and not even trying..."

Hope more experts post

I'm laughin' over here because a spoonful of coconut oil is just not my idea of a snack, kwim? Ah, but things they are a changin'. I am procrastinating starting Bee's anti-candida program. For one reason because we are going on vacation and I just don't want to deal with all the cooking and the very limited food choices. We are sticking with the SCD until we get home. My second reason is that I just don't know what I will bring for snacks when we are out at a playgroup. I mean, carrot sticks, celery sticks, pepper strips, cucumber slices, maybe a salad with hard boiled eggs (I can't stand the texture of hard boiled egg unless I have some toast), cold chicken or turkey but that's about it. That will get old really quick and ds would eat probably none of that (he's two).

What do you do when you are out a playgroup for snacks? I guess I am thankful that summer is almost over and we might be at someone's house where I can heat something up but when you are out at a park? I am so glad I haven't weaned ds yet because, if nothing else, at least he can have that

I'm laughing here too because I couldn't come up with ANYTHING at all. Not even a spoonful of coconut oil.

Oh wait a minute. . . those aren't tears from laughter . . .

I feel like I've been sentenced kwim?

Ah, I haven't started the diet anyway and don't know that I will. I'm hanging on here by a thread as it is. If I find PROOF that I need to do it for dd, I'll do it, but so far I'm not convinced that *my* doing the diet (since I have no candida issues) is going to help her yk? Yes, I'm stubborn and I *may* change my mind. Just not today.

Once you get going it's not so bad, I promise...I've been doing it for almost two months. I don't snack, just eat 3 meals a day, but I can think of a few things that are okay to eat cold, even if they're not traditional snack foods.

deviled eggs
egg salad
homemade pickles
herbal tea with CO in it (has to be hot though so might not be great in the summer unless you drink it at home and have A/C)
salad with chicken or turkey and lots of dressing
tuna/chicken/salmon salad
avocados
avocado & chicken or egg salad

I don't know how many of these things are kid-friendly, though. Maybe veggies with homemade mayonnaise based dip?

Just FYI...carrots aren't allowed (although if you can't live without them personally I don't think they'd be that big of a deal), or nuts, or yogurt, and I don't think veggie juice is, either (sorry jrose_lee!).

:::::le sigh::::::::but, it's so hard, ya know? where do you all get your food lists?

How do you eat your salads? Just plain? My cousin was seeing a naturopath and she had her making "sandwich wraps" with these kinds of salads. Instead of making them with bread, she used large pieces of lettuce and rolled them. I am thinking this sounds pretty good.

I have a question about coconut oil. I am not currently on the anti-candida but am transitioning over. I am taking 2 tsps of coconut oil per day. At this point I just eat it off the spoon and then chase with some water. The texture is a little weird but the aftertaste is yummy so this is completely tolerable. Elaine says to work up to 5-6 TABLESPOONS a day. Does that mean cooking with it as well as eating it with food? Tell me how you get this much in your daily diet. Any ideas for how to get it into a toddler? I am so nervous about starting this diet with my ds because I have no idea what he will eat. His favorite foods are bananas, apples, applesauce, SCD pancakes, SCD muffins and cheese
oh, and SCD yogurt
: It's gonna be ugly.

I eat my salads plain or on celery, but the lettuce wraps sounds like a good idea, too.

Yes I do a lot of cooking with CO. I cook eggs with it for breakfast, have 2-3 T. a day in herbal tea (1 T. per cup), add several T. to soup for lunch, make mayonnaise with 1/2 EVOO & 1/2 CO and use that to make salad dressings. I add 4-6 T. in whatever casserole I make for dinner, too, and pour a T. over steamed veggies if I have them as a side dish. I usually eat a minimum of 8 T. per day, although I'd probably eat less if I could eat butter.

Just FYI for anyone doing Bee's diet...about 1/2 the foods on those links someone provided aren't allowed.

Use it in all your baking or cooking. It makes baked items yummy. Put it in smoothies (ds might like banana, avocado and co), or mix it in w/his applesauce too.
