Is there such a thing as gluten free and dairy free sourdough bread? If so, I sure would love a recipe. How do I start a sourdough culture.

Thanks!

Wow, this is way more work than I am willing to put into bread. I wish I could find a healthy alternative for my son without all that work. I buy myself the sprouted grain sour dough.

There is a way to make sourdough starter using water kefir grains, and I have seen recipes where they make the starter by simply mixing certain portions of GF flour with mineral water over certain time periods (6 hours rest, 12 hours rest). It seems to me that the kefir method would be very easy once you actually gathered the ingredients and actually made it - you store it in a glass jar in the fridge until you need it. There are some good blogs on "The Fresh Loaf" website that deal with GF/DF sourdough starters, one is glutenfreesourdough.blogspot.com. I believe there are also some recent post on here regarding how to make starters for GF sourdough....try searching the site as well.
