I have been for over a year with no problem, but now ds and dh want to do it and I'm clueless. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol"><br><br>
Ds pretty much only eats some gluten snacks so that won't be too difficult. Dh on the other hand is complicated. He gets up at 4:30am for work and leaves at 5:00, he eats breakfast in the car. The only thing I can think of is muffins and he will get tired of them quick. He eats lunch in the company truck so it can't be heated. He usually doesn't like dinner enough to have it again for lunch. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/irked.gif" style="border:0px solid;" title="irked">: I'm just frustrated. I've been trying to get him gf for awhile because he has ulcerative colitis, it's just a ton of work for me. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol">

We are! We've been vegan (or after reading the other thread make that "strict vegetarian"!) for nearly 7 years and gf for over 2. For breakfast, we like things such as:<br><br>
. cooked buckwheat groats topped with milk-of-choice, berries, bananas, and blackstrap molasses or maple syrup<br>
. cooked rice cereal (cook 2.5 cups rice with 11 cups water in crock pot overnight, then mix in apple juice, chopped walnuts & raisins, and cinnamon)<br>
. buckwheat pancakes or a rice/chickpea flour pancake with blueberries!<br>
. cooked millet with (well you get the idea! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol"> - we haven't give up our grains, we just eat gf ones!)<br><br>
Our lunches are almost always leftovers from dinner. What does your husband like to eat? Have you discovered the Tinkyada rice pasta? Corn tortillas?

I guess I should mention that he eats breakfast while driving. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/redface.gif" style="border:0px solid;" title="Embarrassment">

I'm not, but there are two veg*n yahoo!groups: vegetariangf and vegan-and-gluten-free. Both are relatively active--the vegan one impressively so.
