I've done <a href="http://www.marthastewart.com/recipe/enchilada-sauce" target="_blank">this sauce</a> quite a few times - simple and tasty (probably with fewer peppers and canned tomatoes most often). And this <a href="http://www.marthastewart.com/recipe/spicy-enchiladas-with-pumpkin-sauce" target="_blank">pumpkin enchilada sauce</a> is pretty good too.<br><br>

the one in Whole Foods for Vegetarian Mothers and their families- might have the name wrong but it's Cathe Olson's book- is fantastic!!! and easy <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile"> i think i use tomato sauce (canned) and cut out the water
