I just did a small quickbread w/ ground flax, almonds, egg and then flavored it cinnamon raisin and it was pretty darn good. I was thinking surely there is a recipe to do something similiar but a full loaf size. I am craving bread so bad but would prefer to keep it grainfree. I suppose I could just enlarge this recipe several times-BUT if anyone has one already that would be great!

Ok- my lazy butt did some searching. And I am stoked- I have an SCD book that is grainfree but it is not dairy free so not much I could eat.

Now I am a bit confused as not considered a grain- what is it? Buckwheat is a flower right? Quinoa is a seed- right? Anyone know where are there is a comprehensive list.

One site listed sorghum as grainfree- I never seen it classified as such. Also teff was listed- however reading info on it I think it might be a grass- is that right- anyone an expert on that?

Pecanbread.com has a lot of dairy-free SCD recipes. You might also try looking up recipes for the GAPS diet; it's similar to the SCD, but many people avoid dairy in the early stages.

Keep in mind, though, that SCD and GAPS are grain *and* starch-free, and also free of added gums, which is what makes it so difficult to make a loaf of bread that holds together. If you're okay with starches (e.g. arrowroot), that opens up your options quite a bit.

As for sorghum and teff... I don't know. I think I've heard the same about quinoa and buckwheat? I think most people on grain-free diets do restrict these foods, regardless of their botanical classification, but it would depend on your reasons for choosing this way of eating.

Oh- I forgot about pecanbread- it has been about 4 years since we did SCD. As to why I am following GrainFree I am just going by what makes me feel the best. So- I have followed the lists that so no this and that- but I want to just go by what works for my body. I have went off of all starches several times, but don't know if that is what I need for optimal health. I feel ok w/ rice though and especially wild rice(which my understanding is classified as a grass as well). I guess it is a journey to figure it all out.
