I'm in a mild climate so my chamomile has been blooming since last summer but I stopped harvesting it for tea last fall. I went to harvest some today but they're covered in aphids! I tried spraying them off, but it's really tedious and I'm afraid of pulverizing the plant with the water pressure. Does anyone have experience or suggestions with how to harvest aphid-free chamomile buds so I can dry them for tea?

Try a natural soap solution. It suffocates the aphids and they let go. It works quickly and easily without damaging the plant. Put a few drops of natural dishsoap or liquid castille soap in a spray bottle of water. spray gently but thoroughly.
