I have heard that the green sour apples aren't great for making apple butter since they aren't as sweet. I think pretty much any red apples will work.

No idea about the freezing, maybe someone else can chime in on that note...

Let us know how it turns out.

I used all green apples this year for my apple butter, it turned out great, it does have a little tart kick under all the spices, but still very tasty. My apple butter recipe says to use a variety of red and green apples for the best flavor. I froze all my apple butter and applesauce this year, it is taking up an entire shelf in my stand alone freezer. I was too lazy to can, I just washed my jars, spooned the apple butter in, let it cool to room temp, and froze.

here is the recipe i found, havent tried it yet tho.... it says to can it, and it makes about 4 pints
CROCKPOT APPLE BUTTER

Peel and core apples until crockpot is heaping over full
4 c. sugar
4 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. salt

Place in crockpot apples, heaping full, they will shrink as they are cooked. Cover and cook on high 1 hour, then lower heat and let cook all day. Cook until thick and brown with no liquid left.

any ideas on how it would be with less sugar? 4 cups seems like alot

yowzaa! 4 C of sugar?!? You don't need that! We've made it several years in a row now. Canning most, and freezing the little bit extra when not enough to fill the canner at the end of the batch, etc. Anyhow, the recipe is terribly simple. Just make applesauce, then simmer it down, no lid, for a couple hours until dark brown - add spices as you wish. Of course, if you love a certain brand of applebutter from the store, just copy their ingredients list
