This was the first birthday cake for both of my girls...it's from "Into the Mouths of Babes" by Susan Tate Firkaly:

1 cup honey
4 T brown sugar
2 C whole wheat flour (or 1 cup unbleached and 1 cup whole wheat)
1/2 t salt
2 t cinnamon
2 t baking soda
4 large eggs
1 1/2 c oil
2 c grated carrots

Grease a 9" by 13" pan. Mix all dry ingredients and sift. (I never sifted) Beat eggs, oil, and honey. Add to dry ingredients and mix. Add carrots. Bake 30 minutes at 350 F. Top with cream cheese icing.

Cream cheese Icing:

2 8 oz. packages cream cheese.
1/4 c honey
1 t vanilla
1 T butter (optional)

Have cream cheese at room temp. Blend all ingredients.

This makes me want to make this again!!

Thanks for this recipe. Just what I was looking for for Matilda's first birthday party

It's not a cake, but I made a "cake" out of fruit. Cut rounds of watermelon and stacked them. Large circle on the bottom. Smaller circles on top. Secured with toothpicks. Then decorated it with blueberries, canteloupe balls, other fruit. All attached with toothpicks. It looked really impressive. Of course, there was none of that 1-year-old cake smearing stuff, but I'm not really into that anyway.
