We're having a party this weekend and are doing a baked potato bar. So far the only ideas I have for toppings are the usual :

butter
cheese
bacon
chives
sour cream

There will be at least on vegetarian and one non dairy eater in the mix so I'd like to offer more.

What else to people like on their potatoes?

Cheese
Bacon
Hmm, I'm drawing a blank now and most of those you already have.. but salsa is good too.

We do:

butter
sour cream
cheese (either sauce or shredded - my family prefers sauce)
chives
bacon
broccoli
chili - meat and meatless (I make a 3-bean chili and add beef to some of it)
baked beans (from a can - for my sil from Ireland)

I always serve a seasonal green salad and/or a fruit salad on the side. It;s also become a tradition to have dark chocolate brownies for dessert! :

Whenever we do a "baked potato night" for dinner I offer:
salsa
sour cream
sauteed mushroom
carmelized onions
grated cheese (cheddar and jack are good)
steamed broccoli

There use to be a product called 'Salad Toppers' (toppins'?) that came in a jar like Bacos and was in that area of the store. It was a mix of tiny croutons, seeds, bacos, herbs, and other weird things. Pretty good on a potato.

Bac-Os. vegetarian! Bacon-flavored made with soy, no saturated fat or cholesterol, contains no meat, preservative-free. not super healthy. but then either is bacon

This might sound weird, but you could do some "sweet" toppings too, especially if you use baked sweet potatoes too. Like chopped nuts and brown sugar.

There actually used to be this baked potato restaurant/bar in Chicago (maybe still there?), and they had all kinds of weird toppings, including Gummy Bears and chocolate syrup.

I don't like it, but I know a lot of people who use cottage cheese on their potatoes.

If you want to be really healthy, flaxseed oil and nutritional yeast. (Seriously, I was craving this for a few days the other week. Microwave some potatoes, top with garlic-infused flaxseed oil, generously sprinkle the nutritional yeast, add a bit of garlic powder and salt--DELICIOUS! At least it was to me, at the time... maybe I just needed B vitamins. Worth a go, though!).

Any kind of cheesy topping is good--cream cheese, sour cream, cottage cheese, ricotta, grated cheese, Parmesan.

Homemade baked beans, if you want to get really fancy!
