So the wraps at my favorite juice bar have a wonderful tofu that is real crispy on the outside and delicious. I know it is not fried, because they don't fry food there.

This triggered my memory that you can actually bake tofu (perhaps resulting in this goodness?), but I have never tried it and am not sure what to do.

Suggestions? Recipes?

There are sooooooo many variations of this...I would suggest you go to www.vegweb.com and look through their Baked Tofu recipes until you find one that seems interesting.

I put garlic cloves and fresh peeled ginger in my food processor to make a paste that I keep in the fridge. When I want baked tofu I cube it and marinate it with some of the garlic/ginger paste, a little soy sauce or Braggs, sesame oil, and rice vinegar, then bake it (350ish) until it has the texture I like.

Only tip: it will continue to "dry out" a little after cooking, so if you wait til it reaches the texture you want IN the oven, it will be even chewier by the time you have it on the table...take it out of the oven just a little bit ahead.

Another good option for marinated tofu: cut it in slabs instead of cubes, and cook it on the George Foreman grill. Yumm...sandwiches.
