I can't seem to figure out how much applesauce I should use in a muffin recipe instead of milk or 1/2 & 1/2. Is it an equal exchange? I have never used applesauce in baking before<img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/shy.gif" style="border:0px solid;" title="innocent"> , but dh is getting concerned about all the fat in the baked goods.

That's what I thought, but I found this recipe that still calls for oil, eggs, and sugar with a 1/2 cup applesauce. It seems to be replacing milk or cream. But if oil and eggs are the ones that need replacing, what is the applesauce doing in there?
