I am experimenting with coconut flour and need some major help! Me and dc have food intolerances to eggs, most grains and dairy. We also try to stay away from white flours and sugars.
I found a basic muffin reciep that I am trying to use our sub. with, and it is okay, but not great. What do you think I need to change/add? they don't really rise and are still pretty soft/mushy when finished.
Egg sub.
Coconut oil/butter
honey
B powder
pinch of salt
Almond milk
Coconut flour

I think that's it. Anyone have any thoughts, recomendations? Thanks!

I'm not sure, however, I have always been told that with coconut flour, you need A LOT of eggs. I don't know how you would sub and with your intolerances, you obviously can't do lots of eggs. Sorry I can't help...hopefully someone knowledgeable will chime in!

It's my understanding that you can't replace more than half the wheat flour in any given recipe with coconut flour because of the difference in texture. Haven't tried it though. Sorry I'm not much help!

i've tried the muffin recipes from bruce fife's book "cooking with coconut flour" (there is an excerpt of these flying around the internet as a pdf)... they tend not to rise much, even with lots of eggs, and are soft and mushy.

Thanks. May try to locate that pdf. I made some more tonight, after I altered the recipe a bit agian. It's still quite mushy and doesn't rise, but if that's how they are normally, then they won't change much that way I guess. They turned out quite tastey this time!

You may try visiting . They sell coconut flour and have lots of recipies. I do think they explain the need for eggs. You can use all coconut flour, but the eggs are what make it 'work' otherwise it is very mushy. You have to beat it for a long time.

Can you try ground nuts? or buckwheat (not a wheat, it is actually a bean). Just some thoughts. Good luck!
