Hi. I am trying to save the food budget as well our health and am trying to include more bean and lentil recipes in our diet. I like beans and lentils fine, but my husband is a bit more of a meat and 'taters kind of guy.<img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/winky.gif" style="border:0px solid;" title="Wink"><br><br>
Does anyone have any really good bean or lentil recipes that you would recommend to me? I would REALLY appreciate it!

You can use lentils or beans in place of meat in a lot of recipes! I am doing some great ones this week...<br><br>
I'm going to make an enchilada bake - it's like an enchillada all layered up like a lasagne instead of rolled. It will have beans in it where the meat would normally go.<br><br>
I just made great lentil stew last night & froze for later<br><br>
1 large onion chopped<br>
1 heart of celery w/ leaves chopped<br>
1/2 red bell pepper chopped<br>
1/2 green bell pepper chopped<br><br>
put in pot & sautee - add sprigs of fresh herbs (rosemary, savory, & oregeno) & one bay leaf - stir and add:<br><br>
2 grated carrots<br>
1 cup grated zucchini<br>
1 head of roasted garlic<br>
1 1/2 cups brown lentils<br>
1 1/2 cups mixed wild rice<br>
1 teaspoon salt<br><br>
Stir until softened, add 8 cups of water & 2 boullon cubes - bring to boil, lower heat simmer 45 minutes, salt & pepper to taste<br><br>
You can even add potatoes if you want!

the Hillbilly housewife Taco lentils and brown rice - my picky meat-and-potatoes dh even asks me to make them sometimes.<br><br>
I've found that I really have to make beans and lentils very flavorful for my family to like them. I do fine with a plain lentil soup or something, but they really need something with a punch of flavor.

There's a thread on MDC called 'The lentil thread.' It's got a recipe called "Honey Baked Lentils" that is awesome. I bumped it for you.

1 cup lentils, sorted and rinsed<br>
2 cups stock or water<br>
2 celery stalks, sliced<br>
1 carrot, diced<br>
1 potato, diced, optional<br>
1 bell pepper, diced<br>
2 tbs honey<br>
2 tbs tamari or soy sauce<br>
4 tbs coconut oil, melted<br>
1/2 tsp ginger<br>
1 clove garlic, minced<br>
1 small onion, diced<br>
salt & pepper<br><br>
Stir all ingredients together. Bake in a covered dish at 350 until tender (about an hour and a half).<br><br>
Serves 6. Per serving: 287 calories, 10g fat, 38g carbs, 11g fiber, 12g protein, 37% Vit A, 4% calcium, 39% Vit C, 17% iron.
