I have been eating a lot of beans and rice lately. . . Easy to make a big pile and reheat throughout the week for quick lunch, etc. I don't want to get bored though, sooooo how do you make them? I am not veg. but appreciate all the veg. versions. (My current version doesn't have meat, but does have chicken broth so it isn't veg.)<br><br>

Sometimes I do them with some sweet peppers, onions, garlic, and summer squash, and season with lemon juice, black pepper, and cilantro. Top it with some pico de gallo. That's yummy.<br><br>
I also like black beans and rice with onion and tomatoes, seasoned with cumin, chilis, onion, and cayenne. I add some sweet corn for color and sweetness, and it's really tasty. Spicy, but tasty.<br><br>
Take the lentil route, and have lentils and rice with onion, garlic, and greens, seasoned with ginger, honey, and soy sauce. Kale works nicely, and so do collards or spinach. I got this recipe on MDC, actually. It's very toddler-friendly because the honey makes the lentils sweet. DD loves it.<br><br>
Can you tell I eat a LOT of beans and rice?

Mix rice and black or kidney beans with a jar of salsa and some diced tomatoes. It doesn't get any easier than that.

Last night we had lentils and rice with onions, it was yummy! Basically you cook your lentils and some rice together. Meanwhile in another pan you saute sliced onions until they are soft and brown. Mix it all together, good stuff!

We have jambalaya over rice, pinto picadillo over rice, slow cooker beans and rice, chili over rice... all beans and rice meals!<br><br>

Basmati rice and black or red kidney beans. I keep them together in a big ol container in teh fridge.<br><br>
*Throw some on a whole wheat tortilla with cheese and salsa. Roll up.<br>
*Add corn and heat well.<br>
*Put a few spoonfuls, cold, on your salad.<br>
*Put in a taco shell with salsa, lettuce, cheese and sour cream.

We eat a lot of beans and rice also. I cook my beans with onion and lots of cumin and chili powder. My favorite meal is a meatless taco salad with lots of lettuce, veggies, beans, rice, salsa and sour cream or ranch combo. It's yummy in a big bowl with a few tortilla chips crumbled on top.

AAK - what's your current recipe? Would you mind posting it? Be rather exact if you can, lol, I've not made beans and rice before and am not sure how to go about it.<br><br>

I'm sorry for all the questions, but I've been trying to find healthy bean recipes. I'm preggo and meat does NOT sound good, so beans would be a good thing to try and make I think. Plus I've been reading they are healthy for you - and cheap, lol. Again, I'm sorry for all the questions, but if any of you have time to post more exact directions I'd appreciate it, I'm a newbie to alot of "healthy" cooking and trying to get a handle on it all! I'll definitely be copying down these ideas. Thank you again!

Use coconut milk as part of the cooking liquid with red beans and brown rice in a crockpot, and season with curry powder.

we just had this for lunch. Brown rice, black beans, diced tomato onion and a few shakes of some dried herbs. DD ate hers with a spoon i put mine in a tortilla with some spicy hummus. Yum <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/drool.gif" style="border:0px solid;" title="drool">

I make black beans in a sauce pan. I put in garlic, purple onion, green bell peper, a pinch of clove, a pinch of cayenne peper, and sea salt. heat it on medium for a while. Then stir it up mashing the beans a bit so it's a little more sauce like. Then put it on brown rice, top with sour cream. it's really good.
