beat greens

what do you do with your beet greens? I bought some beets today but I usually throw the greens out.
I never know what to do with them. Any ideas?

Ooh, beet greens are very good for you. I actually buy beets just so I can get the greens! I usually just eat them in a salad with other greens or freeze them for putting in smoothies.
My favorite way is to steam/wilt them, then eat with cooked quinoa and tahini sauce.
It's a very simple, but complementary and delicious, combination of flavors.

I put a dash of olive oil in a skillet, cook the beets until they're slightly browned, add the greens (really well rinsed, and still pretty wet), a sprinkle of apple cider or balsamic vinegar, a T or so of tamari (wheat-free soy sauce), and sometimes some sesame oil and/or sesame seeds, put the lid on, turn down, and let cook until well wilted.

You ca nuse other seasonings, but vinegar is important on any dark leaf, as it cancels out any bitterness.
I like young beet greens in my salads and the older leaves I like to juice. I like the pp's recipe. I will have to try that when the beets in the garden are a little bigger.
