ok, I need to buy the nourishing traditions book, but can anyone tell me or show me a sight on making beet kvass? I have a fridge full of CSA beets, backed up from about 4 weeks worth!

Well, just going on memory here, but

You peel the beets (about 3)
chop them, but not to small
Put them in a 2-quart mason jar
fill with filtered water, mix about 1/4 cup of whey, and 2 spoons of sea salt.
Put a lid on and let sit for 48 hours
pour out and refridgerate
refill jar of beets with water and let sit for 24 hours
pour out again.

You're done!
