Better than Icecream

truly *is* better than icecream! Yum! Yum! I used the recipe from Cathe's book and just wanted to thank you for it! And frozen bananas are a delicious new treat I've discovered.

Forgot to ask, what other combinations taste good? My son wants peach icecream!

I'm so upset everytime I hear about recipe's from Cathe's book!! I bought it 6 weeks ago. Read a couple of recipes and then put it *somewhere* b/c I wanted to read it at work. I can't remember where!! It's not anywhere where I would imagine it would be!!!


AAAAhhhh - I need a substitute for ice cream and this just reminds me of the stupid thing I did!!!! AAAARGGGGG!!!!

Goatlady - you just made my day. I got a couple of bad reviews on amazon and had been a bit down but I'm so happy to hear when someone likes my recipes.

Chaja - here's the recipe from the book (until you find yours). ALso, I posted a couple more for you Goatlady. It's AWESOME with peaches!

Strawberry-Banana Cream

1 cup frozen sliced bananas
1 cup frozen strawberries
½ teaspoon pure vanilla extract
1/4 to 1/2 cup milk (dairy or non-dairy)

In a food processor, pulse fruit until coarsely chopped. Add milk a little at a time through top of processor, and puree until creamy. Serve immediately, or freeze in individual-size containers for later.

Yield: 4 servings

Mango Sorbet (frozen diced mango is available at Trader Joe's)

2 cups frozen, diced mango
1/4 to 1/2 cup unsweetened pineapple juice

In a food processor, pulse fruit until coarsely chopped. Add juice a little at a time through top of processor, and puree until creamy. Serve immediately, or freeze in individual-size containers for later.

Makes 4 servings

Variation:

Mango Ice Cream: Substitute milk (dairy, rice, soy, almond, or coconut) for pineapple juice.
Mango Frozen Yogurt: Substitute plain or vanilla-flavored yogurt (dairy or non-dairy) for pineapple juice.

Note: This is best eaten right after it is made. If you want to save it for later, place in individual containers and leave at room temperature about 15 minutes before eating. It can also be poured into popsicle molds.

Pina Colada Sorbet

1 cup pineapple chunks (fresh or canned)
1 1/2 cups frozen diced mango or peaches
1/4 cup unsweetened shredded coconut

Place all ingredients in food processor and puree until smooth.

Makes 4 servings

1 cup diced peaches or frozen berries (raspberrie, blueberries, etc.)
1/2 teaspoon vanilla extract
1/4 to 1/2 cup milk (dairy or non-dairy)

Place nuts in food processor and pulse until coarsely chopped. Add bananas and berries or peaches. Pulse until fruit is coarsely chopped. Add milk a little at a time through top of processor, and puree until creamy.

Makes 4 servings

Thanks!!! I'm sure I'll find the book soon. I'm always losing things and then finding them. It drives my dh crazy b/c he still has every book, toy or anything else he has ever owned. Well, we compliment each other. At least I've never lost my ds!!!

oh hell, those are the kind of bad reviews to *frame*. do you care what someone who is too much of a ditz to look for tahini at kroger's thinks? 'regular supermkt indeed'. 'omg, what's millet?' i had a canary when i was four and knew what millet was *snort*.

I know Suseyblue and I know my book is not for everyone - but still - it is my baby and it hurts to have someone not like it.

I agree with suseyblue! I haven't read your book yet, but it's gonna be on my amazon wish list! Some people just can't think out of the box, as you say, at all. And if feeding their kids the best doesn't inspire them to do so, nothing will! Of course, I'm the kind of person who thinks if you CAN get it at a "regular" grocery store, it's probably not that good for you!
ot- lol, yitlan, i was just pondering that; something loses cachet for me when it hits the grocery store shelves. like a microbrew that has to be picked up by ferry off an island in maine automatically tastes better than one that's made it to the supermkt shelves.

i have been trying to be more conscious about that kind of stuff. buying local is good, but the local mkt employs people here too and small companies that have struggled and struggled to finally 'make it' need to be supported, not have me turn up my nose at them.

but gar, you can get quinoa at any store anywhere, it's not like me trying to find monkey mushrooms or something. obscure, tahini is not! why doesn't that mom just buy the dang gerber if 'ingredients' scare her off so much?

I just had to post my newest "ice cream" when I read Cathe's recipe for mango sorbet. I buy the frozen mango chunks at Trader Joe's and put them in the blender (or food processor) with coconut milk. I have gestational diabetes and it doesn't raise my blood sugar to eat this, and it is YUMMY!!!

OT- Cathe, I have made so many of your recipes that I have gotten off of this site (your sourdough applesauce cake is one of our absolute favorites!!!), and they have always been WONDERFUL!! Your book is on my list of books to buy when I get the $$ together! I wouldn't worry about a few bad reviews (easier to say than do, I know!!). Go back again and only let yourself read all of those other WONDERFUL reviews and ignore the rest!

Yum - coconut milk sounds really good. I was trying to come up with a coconut better than ice cream - used frozen bananas, coconut milk and shredded coconut but the banana overpowered everything. I'll try it with the mango next time.

T Cathe - I know it makes you sad to see bad reviews, but as a consumer, I really don't see them as bad - I'm just as likely, if not more-so, to buy the book, because I know it is for me after reading those reviews...

I am buying one right now. If the momma's here like that book it is good enough fo me.
Cathe, not really a combination, but I was thinking of using nut butter rather than grinding fresh nuts so the texture wouldn't be gritty. I'm going to try it soon!
