This is one of my favorite salads...<br><br>
Sante Fe Grilled Chicken Salad w/ Cilantro Dressing<br><br>
For salad:<br>
Mixed greens<br>
grilled chicken breast<br>
corn kernels<br>
rinsed black beans<br>
diced red bell pepper<br>
shredded cheese<br><br>
For Dressing:<br>
3 cloves garlic<br>
1 tbsp. minced ginger<br>
2 bunches finely chopped<br>
1/2 cup fresh lime juice<br>
1 1/2 tsp. wine vinegar<br>
1/2 tsp. cumin<br>
3/4 tsp. salt<br>
1/2 tsp. freshly ground pepper<br>
1 tbsp. honey<br>
1/2 cup freshly grated parmesan cheese<br>
1/2 cup canola oil<br>
1/4 cup olive oil<br><br>
To make dressing:<br>
Drop garlic cloves and ginger through feed tube while motor is on. Mince well. Add the cilantro and process until finely chopped. Add spices, lime juice, vinegar, honey, and parmesan cheese. Process until well mixed. With motor still running, slowly pour the oil through the feed tube. Let process one more minute.<br><br>
Notes: You can add crispy tortilla strips for non low-carbers if desired. I also like to combine the corn, black beans, and red pepper ahead of time with a little lime juice and refrigerate.
