I have a recipe that is called Pumpkin-Applesauce Tea Bread, but we actually always made it with summer squash (Zucchini) rather than pumpkin. It uses 1/3 c molasses for 2 loaves of bread, along with 2 c sugar and 3 2/3 c white flour, though.
There's another one in here that I haven' tried that is a Winter Squash bread that calls for 1/2 c sorghum or honey and 1 c brown sugar (for 1 loaf of bread). You could probably sub molasses into that one.
But, like a PP, I don't know if those are "healthy" enough for you, since the do have white sugar and flour.
