Can you stop kneading bread for awhile, and then come back and finish later? Or is that going to ruin it?

I have the hardest time making bread these days because inevitably I'll get it all mixed up, and begin to knead, and one or more of my kiddos will all of a sudden be desperately needy. Like today, DS comes wandering in two minutes into the kneading with a poopy diaper and starts climbing my leg to say he's tired. I need to change him and rock him awhile and put him to bed, but I don't want to leave the bread because it'll start to rise sitting there when it's not kneaded yet.

What do I do in a situation like that, to save the bread?

Hmmm...I know this isn't what you're asking and you might have already considered this but have you heard of the no knead method? I have two toddlers myself and am always looking for ways to save time. Here's the recipe/directions I just printed and am going to try later tonight.

Edited: OP, am I reading this right: you have twin 21m olds? I have twin 18m olds, hence all the more reason I need fast and easy results! lol

Yeah, we actually tried it, and DH and DD1 didn't like it as much. I can't eat bread myself, I make it for DH and the kiddos, and if they don't like it, there's not much point in making it. Thank you for the suggestion, though. It is a great idea.
