we eat a lot of cereal here---honey-nut o's (cascadian farms) for dd<br>
kashi go-lean crunch for me (which i love!) & bulk granola for dh<br><br>
and bread/toast. and dh drinks 3 cups of coffee/day, which i know he won't stop.<br><br>
so, what are some good, healthful substitutes for breakfast that would minimize acrylamide intake? i know we can eat more eggs, i suppose, but what else? i'm sure the standard american breakfast foods/meals are rather unimaginative...can anyone speak to breakfasts in other cultures? i believe that miso soup is eaten in japan...<br>
oh, and we do eat meat/fish.

Egg custards (with fruit) and egg muffins (with veggies) are the standard around here. Both are do ahead and keep in the fridge for a week.

briefly, acrylamides are substances formed from heating carbohydrates, like breads, cereals, and starchy vegetables in high temperature (above 250F). they are carcinogenic (apparently also found in coffee). apparently dry heating is worse--baking, frying--steaming and boiling not so bad. so, since breads and cereals are usually baked, they have acrylamides.<br><br>
maybe it's better to title this---any suggestions for non-bread/cereal breakfasts?

boiled quinoa or millet eaten like traditional cereal, fruit and yogurt smoothies, cheeses, avocado over eggs. I find it easiest to find something you like and eat it every morning. I know it is boring for some but I like routine.
