We can get a v. good price on quality bulk cheeses, but I was reluctant because they sometimes mold before I can use them.

I tried a trick someone told me about, wrapping a block of harder cheese like mozza or cheddar in a vinegar soaked cloth and putting it in a plastic bag in the fridge.

Haven't had cheese go off since.

Thought I'd share.

Can you freeze pre-packaged blocks of cheese without the texture turning?

Our store has all their cheese on a great sale this week, and I'd like to stock up, but if it doesn't work out, it's still wasting money.
