Hi,<br><br>
I roasted a lovely butternut squash tonight and scooped out its flesh.<br>
What should I do with it?<br>
I often put butter and nutritional yeast on it--but I'm hoping to<br>
make something exciting with it.<br>

butternut squash risotto<br><br>
These are three of my faves. Google for recipes; you'll find a bunch to choose from. I usually make mine up as I go along (depending on what I've got, etc.) but I know Epicurious.com has a yummy risotto recipe.<br><br>

I just made a lovely squash soup. It was really easy.<br><br>
My favorite way to eat it is w/ butter and some maple sugar, though. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/wink1.gif" style="border:0px solid;" title="wink1">

Yesterday I just made a Martha Stewart recipe--basically you saute some garlic, cayenne pepper and other herbs in some olive oil. Add it to the squash. Use this top pasta, and put ricotta on top of that. I didn't have ricotta so I used sour cream. It was so good it should have been called dessert.

Goat cheese ravioli with roasted squash cubes, all sautéed in sage butter!

You already roasted it, so this won't work for you but if you have butternut in the future, here's another idea I got from an MDC mama! Basically, cut into french fry sizes pieces, toss with a little bit of olive oil and salt, and bake. Healthy fries! Can be done with sweet potatoes too.<br><br>

The best butternut squash soup is the easiest. Just mash the cooked squash in the pot with a carton or so of chicken or veggie broth, add a splash of cream, salt & pepper. Yum. Too much else hides the flavor. If you want to get fancier, add a dash of nutmeg, then sprinkle goat cheese and chopped chives/scallions on top.
