<p>On mornings I forget to soak my oats... or don't have time to soak the wheat for some bread, can I still substitute water with whey?  I'm new to soaking and I know that by soaking it sometimes leaches out the bad stuff.... but in cases I don't have time, is cooking with it okay to add some extra nutrients?</p>

<p>I would think that once you cook it, the enzymes/probiotics are killed. The purpose of soaking it is to use the enzymes to break down the phytic acid so that the nutrition in the grain is digestible- once it's cooked the enzymes are dead.</p>

<p>It probably won't help break down the antinutrients, but whey itself is nutritious so you would at least be adding some nutrients to your oatmeal.</p>
