We bought some carrots today w/ the greens still attached. Is there anything I can do with the tops besides enrich the landfill?

Allright, I think they'll be allright for a while.

Carrot Top Soup

Pull the leaves of the carrot tops off their stems (from about one bunch), leaving you with about 2 or 3 cups of greens. Wash them and finely chop. Either grate or finely chop the actual carrots.
Melt a few T of butter and add carrot tops and carrots, 3 T uncooked white rice, 2 chopped leeks, some thyme and dill and salt. Cook for severaql minutes and add 6 c stock. Simmer until the rice is soft, 15-20 minutes.

I really enjoyed this soup. It's easy, delicious, and resourceful
