Or will the lentils get mushy? It's got potatoes in it, too, and I know they will probably mush up a bit. It's the lentils I'm mostly concerned about. Rice freezes well, right?

I tend to get a bit over-enthusiastic with my vegetables and add-ins when making soup.

I've got way too much final product, and I'm going to need to do something with the leftovers because we'll never eat them all.

Lentils freeze just fine. They might be a little softer, but not by much.

I freeze leftover lentil soup all the time and it is still really good left over!
