I drove all the way across town because my grocery store is lame. They have a whole shelf of Passover goods. The one across town, about a whole aisle's worth. I want to make my Bubbe's sponge cake which has always been heavenly. I stupidly bought regular matzo meal. If I grind this up really smooth in the food processor, do any experienced Jewish bakers out there think it will resemble cake flour enough to work?

I have to go out tomorrow, I may be able to find it at the other store I'll be near, but if I don't get out, I want to know if it could work.

I've tried making my own matzo meal from whole matzos, and have never been able to get it fine enough with a food processor. It's not exactly what your asking about, I know, but I think you might run into a similar problem trying to make flour from meal. It will be next to impossible to get it fine enough using a food processor. You definitely want fine flour for your spongecake, not meal. You could probably get it fine enough with a grain grinder, but it would likely be easier for you just to make the trip for the flour.

Do you have any potato starch in the house? Starch makes for light, fluffy baked goods.

Putting the course matzah meal through the food processor should work, if you have a powerful enough food processor.

I don't know about matzo cake flour, but I got pretty decent matzo meal between a french rolling pin and bowl, and my little mortar and pestle. It was a little coarser than bought matzo meal, but it worked. Of course I added way too many eggs to the matzo balls, so had more like.. well it was hard to describe but they didn't hold together well lol. Oh well, I learned how much eggs mazto balls can handle and how much they can't. And I made the good ones for seder and only experimented on my dad and me. Still tasted decent.

Well, I managed to get out yesterday and swap my matzo meal for the cake flour. There is no way you can grind matzo meal that fine. I think it would be easier to make your own matzo meal from regular matzos though. The cake did turn out yummy.
