I have fallen in love with the swiss veggie burger at A&W. I don't go often though because it's too expensive. I am STRIVING to perfect a recipe for it. I almost have it down but they are still falling apart a bit. Here is what I have so far:

1 lb mushrooms, cut into raisin sized chunks
1 onion, minced
1 tbsp olive oil
4 slices whole wheat bread, finely diced
1 egg
1/2 package french onion soup mix
2 tbsp flour
salt
pepper

Fry mushrooms and onion in onion oil until onions are clear.

Put mushrooms and onion into a bowl and stir in the bread, egg, onion soup mix, flour, salt and pepper. Shape into burgers.

In a non stick skillet, fry burgers until browned. Flip and fry other side until browned.

I also made a sauce to put on them. It was really good:

1/4 cup mayonaise
1/8th cup honey dijon mustard
1 tsp white sugar

Heat on low until the sugar dissolves. Spread onto burger.

Yeah, it's soooooooooooooooooooo good!!!!! Yum. It's called the Swiss Veggie Deluxe. I don't put any cheese on it though because DS can't have dairy.

If they're falling apart, then your binder isn't binding enough... in other words your mixture may be too wet. How far are you cooking your mushrooms? Mushrooms have a TON of water in them and may be too moist for your purposes, you might want to cook them a little longer.

Your binders are egg, bread and flour. Varying your ratios, and the types may give you the solution you're looking for. You can try toasting the bread first, or pulsing it in the food processor to be finer, or trading oats for flour, using an egg white instead of a whole egg, etc.

Laurel's Kitchen has a amazing oatmeal walnut burger that has eggs. She forms the burgers, simmers them in a 1/2 inch or so of vegetable stock to cook the oatmeal and egg and then as that boils away the burger crisps up. it is so juicy and yummy. maybe a cooking technique like that would help.
