Can anyone share an idea for a nice, savory vegetarian casserole (or similar type of thing) for a luncheon? Some of my guests are vegetarian but others are die-hard "if-it-ain't-got-meat-i-won't-eat" types, so I need something that will feel hearty and surprisingly satisfying to my meat-eaters. I'm thinking maybe something with eggs and or cheese, but I want something that will be a new experience - everyone is familiar with quiche.<br><br>
Any websites or SPECIFIC recipe names/ideas that you would be willing to share would most appreciated!<img alt="" class="inlineimg" src="/img/vbsmilies/smilies/loveeyes.gif" style="border:0px solid;" title="Loveeyes">:<br><br>

I really really like the Broccoli-Mushroom-Walnut Phyllo Pie in <i>Vive Le Vegan</i>. It's so satisfying and yummy and not that much work, other than layering sheets of phyllo to put between layers of the filling. It's a great dinner with a green salad and a good red wine.

i also really like Vive's Chickpea Ratatouille ... but the phyllo pie is "prettier" LOL

Speaking of Vive le Vegan, I really like the Sweet Curry Chickpea Casserole. It would be good if your guests like something interesting and ethnic inspired.

so it's sounding like i should be looking into this cookbook, eh? i had some moosewood cookbooks but the person-formerly-known-as-my-husband claimed them and since he cooks for a living i thought it seemed justified!
