Thought I'd share this recipe -- t's actually a mash-up of two different recipes that I put together -- for those of you who are swimming in snow peas from your CSA or market. It's a little different than your average stir-fry and was a hit here. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/thumb.gif" style="border:0px solid;" title="thumbs up"><br><br>
Warm chicken and snow pea salad<br><br>
Use either precooked (like roasted or rotisserie) chicken, or poach a breast in some chicken broth. Shred the chicken and set aside.<br><br>
Trim and sliver the snow peas - it's ok if some of the peas fall out. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin"><br><br>
Make the dressing:<br><br>
4 T rice wine vinegar<br>
1 T honey<br>
1 T soy sauce<br>
1 t. minced ginger<br>
1. t. minced garlic<br>
1 t. chile paste (I used Sambal Oelek)<br>
1 t. sesame oil<br><br>
Taste the dressing and adjust the seasonings.<br><br>
In a wok or frying pan, heat an additional 1 t. sesame oil and stir fry the snow pea slivers for 2-3 minutes. You want them bright green and still crisp. Add the dressing and the shredded chicken. Toss to combine. Top with sesame seeds or chopped cashews. Can be served warm or cold. I imagine this would be very nice with other veggies in too -- napa cabbage, carrot, spinach, etc. -- but i just wanted to use up my snow peas. Enjoy!
