I'm looking for a good Chicken Curry salad Recipe. I had on the other day with celery and cashews. There might have been some other things I can't remember, but it was great.<br><br>

I make a good one:<br><br>
pick off all the good bits of a roasted chicken<br>
add mayo<br>
salt & pepper<br>
garam masala<br>
chopped granny smith apple<br><br>
Yum! We've recently gone veg and I might have to try this with tofu as we love it so much.

I've never made this for a crowd that someone didn't request the recipe - Thanks to Allison who gave it to me when I requested it from her!<br><br><br>
Chicken Salad<br>
(serves 5)<br><br>
Mix together:<br><br>
2 c. chicken, cut up (white meat, approx. 1-1/2 breasts)<br>
1 8-oz. drained chunk pineapple (or tidbits)<br>
1/2 lb. seedless grapes<br>
1/2 c. chopped water chestnuts<br>
1/2 c. chopped celery<br>
1/2 c. toasted almonds or pecans (I use pecans)<br>
3/4 c. mayonnaise<br>
1 tsp. curry<br>
2 tsp. soy sauce<br>
2 tsp. lemon juice
