Chicken recipes please :)

We eat mostly chicken around here - chicken breasts that is - and I'm looking for some good recipes for how to change it up every now and then. We aren't into anything too fancy (or too much prep time
), but my fall-back (saute in a little coconut oil with a variety of seasoning/marinades depending on my mood) is getting really, really, tiring! What are some other good family-friendly chicken breast recipes? Thanks!

I make a lot of chicken bakes that usually include rice, a cream of soup, and the chicken breasts. My family's favorite though is sour cream chicken. I take a container of sour cream, a can of cream of chicken soup and mix those together. Put the chicken breasts in a baking dish and cover with the sour cream/soup mixture. Bake at 350 for about 45 minutes (or until chicken breasts are done). I cook rice on the side for this dish.

I've also gone to www.allrecipes.com and typed in chicken. You'll get a ton of recipes.
I love a greek-style chicken - drizzle a bit of olive oil on top, chop a tomato and some fresh basil and top with feta cheese (can also add olives) and bake in oven - great with lemon roasted potatoes!!!!

My fave, though, is just bbq a plain breast and eating it with peanut sauce, or tzatziki and veggies/rice.

1 Tbsp fresh grated ginger
2 Tbsp soy sauce/tamari
2 Tbsp hoisin
1 Tbsp honey
1 crushed garlic clove

cut chicken into chunks, marinate, grill or broil.

Thighs are tastier than breasts for this but both work well.

What about homemade chicken tenders? They're yummy, kid-friendly, and versatile. You can bake them in the oven or fry them, coat the chicken with cornflakes, bread crumbs, cracker crumbs, or panko, marinate them first, put all different kinds of toppings/dips on them, eat them over salad, eat them in sandwiches, etc. One of our favorites is buffalo-style chicken tenders (either breaded or sometimes just sauteed in a little butter and then tossed w/Frank's Red Hot) on mixed field greens with carrots and blue cheese dressing.

I made a chicken parmesan bake the other day -- mixed parcooked pasta with marinara, mozzarella, and frozen spinach, then topped the whole thing with chicken breasts that I'd breaded and sauteed, then topped those with more mozzarella and baked until the whole thing was hot and cheese was browned.

Quick chicken marinade for bbq: plain yoghurt, alittle olive oil, s&p, saffron.
Do them whole if rushed, or cut into strips and skewer.
We eat a lot of chicken in this house, so here's a few of my meals. Just LMK if you want specific recipes; I'm just listing things from my menu planning file. For a lot of meals that traditionally have whole chicken (like chicken and dumplings and such), I use the bonless, skinless chicken breasts because they save sooo much time.

Chicken and stuffing bake (chicken breasts covered in a natural version of cream of mushroom soup, topped with stuffing)

Buffalo chicken chunks (just like wings, except using cut up chicken breasts)

Chicken quesadillas

Salad with chicken (caesar salad, spring greens, etc, with a different dressing and some baked chicken on top)

Smothered chicken (baked chicken topped with bacon and cheddar cheese)

Chicken enchiladas

Chicken strips

Chicken fettucinne alfredo

Chicken and dumplings

Pollo Relleno (chicken breast pounded thin and rolled with monterey jack and green chile peppers inside; breaded and baked)

Coq au vin (chicken and veggies cooked in burgandy wine)

Blackened chicken fajitas (blackened chicken breast, peppers, and onions, served with pico de gallo and tortillas)

Country captain chicken (chicken in a tomato and curry sauce)

Chicken and broccoli scampi (similar to shrimp scampi and tossed with linguine)

Stuffed chicken marsala (chicken stuffed with Italian cheeses and served with marsala wine sauce)
