We eat a lot of chicken in this house, so here's a few of my meals. Just LMK if you want specific recipes; I'm just listing things from my menu planning file. For a lot of meals that traditionally have whole chicken (like chicken and dumplings and such), I use the bonless, skinless chicken breasts because they save sooo much time.
Chicken and stuffing bake (chicken breasts covered in a natural version of cream of mushroom soup, topped with stuffing)
Buffalo chicken chunks (just like wings, except using cut up chicken breasts)

Salad with chicken (caesar salad, spring greens, etc, with a different dressing and some baked chicken on top)
Smothered chicken (baked chicken topped with bacon and cheddar cheese)

Chicken fettucinne alfredo
Chicken and dumplings
Pollo Relleno (chicken breast pounded thin and rolled with monterey jack and green chile peppers inside; breaded and baked)
Coq au vin (chicken and veggies cooked in burgandy wine)
Blackened chicken fajitas (blackened chicken breast, peppers, and onions, served with pico de gallo and tortillas)
Country captain chicken (chicken in a tomato and curry sauce)
Chicken and broccoli scampi (similar to shrimp scampi and tossed with linguine)
Oven BBQ chicken
Garlic chicken (Chinese dish)
Stuffed chicken marsala (chicken stuffed with Italian cheeses and served with marsala wine sauce)
Parmesan-crusted chicken
Mediteranrean chicken and vegetables (chicken breasts and lots of veggies like eggplant, zucchini, in a stewed tomato sauce; served with couscous)
Mediterranean garden couscous (parmesan couscous with chicken, broccoli, and feta cheese)
Chicken cordon bleu
Buffalo chicken sandwiches (chicken breasts coated in hot sauce and broiled with red onions)
Chipotle chicken (baked in a chipotle and sour cream mixture)
Santa Fe rice pilaf (rice, chicken, black beans, corn)
Garlic rosemary chicken (simmered in chicken broth and seasonings)
Baked Italian chicken (just baked in Italian dressing)
Black and Bleu chicken alfredo (blackened chicken served atop fettucinne alfredo with bleu cheese dressing added to the sauce)
Chicken Caesar and feta pitas (chicken baked or sauteed and served in warm pitas with onions, tomatoes, feta cheese, and caesar dressing)
Teriyaki chicken (marinate in teriyaki sauce and stirfry with some veggies)
Baked chicken and orzo with feta (chicken and orzo baked in a minty tomato sauce and topped with feta)
Southwestern egg rolls (like the ones at Chili's, full of chicken, spinach, cheese, black beans, corn, and deep fried)
Chicken divan and egg noodle bake (from a Rachel Ray cookbook; healthier version of the cream-of soup casserole with chicken, broccoli, and egg noodles)
