Our Dr. recommend coconut oil and mercola.com sings it's praises, but it seems like most sites list it as a major no-no.

It's because it's almost ALL saturated fat. That's the issue you really want info about.. and there are varying opinions out there about that.
True, it has lots of saturated fat, but so very many health benefits! I use it every day, as do my kids. It's a very healing, nourishing food. I don't believe that the saturated fat thing is an issue.
coconut oil is a good fat. Saturated fats are not so bad!!!People survived for who-knows-how many years on fats that weren't processed or made from corn and veggies.
Extremely healthy.

1.The saturated fat in coconut oil that everyone is so afraid of consists of Medium Chain Triglycerides that are healthy fats that actually burn easily w/out stimulating weight gain or fat storage.

2.50% is Lauric Acid which can ONLY be found in mother's milk, besides coconut oil. Lauric Acid is antifungal, antibacterial, antivirus and supports healthy thyroid functions.

3.Doesn't go rancid for years and really the best oil for cooking, since even olive oil gets bad in really hot temperatures, but not coconut oil.

Enjoy it without being nervous.

Actually, it has to be virgin for full nutritional benefit. I think the best one that I know of is from Tropicaltraditions.

There is more info on www.coconutoil.com.

I just made it part of my life this week after reading Eat Fat, Lose Fat by Sally Fallon (author of Nourishing Traditions)
I just rubbed some on my hands and face and it feels so good! I also cook eggs in it. Processed modern foods are unhealthy...whole traditional foods are what our bodies have thrived on forever!

PS--The diet debates are soo annoying and confusing! I like NT logic because people have proved for 1000s of years that it works!

Amen, sister.
I would absolutly stay away from processed products with coconut oil listed as an ingredient. The quality of coconut oil is a huge factor in whether or not it's healthy. Most coconut oils are heavily processed and not good for you at all. However, a minimally processed organic coconut oil is super healthy for you. Extra virgin, organic being the best. The saturated fats in it is different than the regular evil saturated fats. The fats in coconut oil do not coagulate in your arteries. It's worth researching, but be sure to research organic virgin coconut oil.
I get virgin organic coconut oil from tropicaltraditions.com. It is kind of expensive, but I waited for a deal and got four 1-qt jars for $15/each. I bought them this summer and still have over 2 jars left. Just look for the special deals they have each month.
I have a coconut vitamin E rub I put on my stretch-marked belly everyday as well
It smells so good!
