Greenwise has a buy 1 get one free on greens this week. See link. Any ideas of what I could cook with them. Recently I've done a white bean soup w Kale and use Kale/spinach in smoothies. Also, have had various green sauteed in garlic and have made swiss chard w currants. Any other ideas? It has to be vegetarian. They also had a good deal on green beans. Any ideas for cooking them other than steamed or salad?

14 ideas for kale!

Green beans:
1. If you're willing to use canned cream-of-mushroom soup, there's that "holiday green bean casserole" recipe from (I think) Campbell's soup. I like to make it with salted peanuts instead of the fried onions.

2. There's a Middle Eastern dish called loubie that I found is easy to simulate at home: Steam the green beans. Cut a bunch of garlic cloves in big chunks and sautee them in olive oil for a couple minutes. Add green beans, tomatoes (canned ones are fine), and garam masala (if you have it--otherwise, lots of black pepper and cinnamon and a little salt). Simmer, covered, at least 40 minutes. Serve with rice and/or pita bread.

So if you do milk, eggs and cheese, Swiss chard is great in quiche. Also along these lines would be spanikopita with spinach...spinach or any greens lasagna. Pizza toppings...

We like to use them in...
- smoothies
- quiche (we are having this tonight, actually... http://cookingformyfamily.blogspot.c...e-tonight.html )
- egg scrambles
- mashed into potatoes with parmesan cheese (yum!)
- spaghetti sauce
- puree to add into other things in small amounts to add more nutrition
- salad
- dip (you know like spinach dip, mmmm)
- I also have a recipe for green with sweet potatoes in burritos. I wasn't a huge fan but a lot of other people liked them
