Hi everyone!

I'm having my friend over for dinner tonight for her birthday. She has gestational diabetes and is having a big struggle with it. I'd like to make her some kind of "dessert" for her birthday - any suggestions?

Strawberries and fresh whipped cream.

If you can get good strawberries (they're in season here), they won't need any additional sweetening. Make the whipped cream with a little vanilla and no sugar and you should be good.

Strawberries with whipped cream sounds perfect! Most berries are pretty low on the glycemic index and good for diabetics. And the unsweetened whipped cream would be perfect.
