Yesterday - Udon noodles/tofu with pad thai sauce and broccoli on the side
Today - Out
Tomorrow - Pasta and sauce made of tomatoes I rescued just in the nick of time today!

Hey!

How is everyone doing this summer? School is starting here next week (I know a lot of places it has already started!), so I am thinking about meal planning again. This week is a toss-up due to guests and weekend plans - end-of-summer frenzy - but next week, a plan will be needed, since my freelance work is going strong, too. I think I'm going to dust off some neglected cookbooks and then post my meal planning for the week here.

Otherwise, yesterday we had guests for dinner, so I made spinach lasagna, steamed broccoli with butter, and a big salad. Here is the spinach lasagna recipe I used - a keeper for sure. I used more garlic and more parmesan, plus fresh instead of regular mozzarella.

The dinner plan this week:

MON - Homemade sushi with smoked salmon and avocado :thumb
TUE - Pasta with sauteed vegetables :thumb
WED - Skirt steak, salad, frozen fries :thumb
THU - Rice/tofu/vegetable bowls :thumb
FRI - Pizza night (frozen)
