I came up with this easy, healthy soup when I raided my cabinets and slopped it all together.
I fill a large pot about 1/3 full with water. I add three vegetable bullion cubes and mince up three medium cloves of garlic and put it in to flavor the broth as I'm waiting for it to boil and while I'm prepping the other ingredients.
I then cut up an onion, chop some spring onions, cut a pound of tofu in very small chunks, and slice some button mushrooms. If I have it, I chop up a few leaves of kale, as well. I dump that in, then drain a can of lentils and a can of kidney beans and add it to the "soup".
I then season to taste. I use italian seasoning, sea salt, pepper, LOTS of garlic powder, and whatever else I feel like dumping in. I bring it to a boil then let it simmer for a few minutes.
I re-season when I dump the soup into my bowl; I'm a big fan of garlic! It's really hearty and filling and eats like a meal.

Oh... I don't really measure anything I dump into the soup. If it looks like it needs more of something, I just put it in.
