I went to Trader Joes the other day and they had, as their sample, a super easy, relatively cheap ($7), relatively healthy pasta recipe. It was so yummy, so I tried it at home last night and it was even better when I made it!

You take one 16oz bag of pasta (they used rotini - the spiral kind), one can of artichoke hearts (in water, not oil), one jar of their mixed grilled vegetable brushetta and one container of their crumbled feta with mediterranean herbs. The only thing I had to "do" other than mix it all together was chop and drain the artichoke hearts.

It made a TON of pasta (I don't think I've ever cooked a whole 16oz bag!), so we will have left overs for days. Nice cool pasta salad for these hot days.
