Let's talk about your favorite ways to cook all those farm fresh eggs! I have found that the yummy freshness cooks up differently. The eggs are richer, and more moist. I have not had luck with scrambled or boiled eggs. We are basically using them for fried eggs and baking. Oh and french toast. I have 2 dozen eggs overflowing my fridge right now.<br><img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/help.gif" style="border:0px solid;" title="help"><br>
I think "oh good, I cooked 3 eggs for me and the kids for breakfast, that made a dent in them!" And then the kids come in with 3 more eggs. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol"><br><br>
So what do you make when you have an abundance of eggs? Any 3+egg recipies?

I've got a 20 egg chocolate cake recipe I can dig out if you would like.<br><br>
The other thing I make with lots of eggs is quiche. It's a very vague recipe. All I do is make some pastry & line a dish with it. I fry up whatever I have in the garden in some butter. Things like onions, carrots, peas, garlic, silverbeet, bits of brocolli or cauli, beans, kale, beetroot greens etc. I finely chop the veges so as not to have any big leafy bits or chunks of things in there. I also add in some herbs from the yard too such as parsley, rosemary, thyme, lovage. When the veges have wilted down, I mix in about 9 or 10 eggs, some salt & pepper & maybe a touch of vege boullion powder if I have it & sometimes some grated cheese. Then I bake it in the oven.<br><br>
You can also do baked egg custards which use loads of eggs. There should be a recipe somewhere on the net for them.

20 egg cake?! wow!!<br><br>
I am pretty sure i read in the nutrition form , maybe N.T., information on how to use the egg or prepare it for scrambled when it is a fresh egg. Do a search over there or ask there I bet someone knows.

I make this dish for dinner.<br>
sautee onion/garlic as much as you like<br>
Make 1-2 cups brown rice<br>
steam 1-2 cups or more veggies (kale,carrots,beets) whatever you have<br>
beat 5-6 eggs with a little milk (I've made it without milk)<br>
1-2 cups cheese (fresh shredded parmeasan SP? is yummy) but whatever you have<br>
mix all of the above and bake it for like an hour or until done on I'm not sure sorry probably like 350 degrees. Keep it covered and then right at the end top with cheese. It's yummy.
