We do a lot of main-dish salads and a lot of nibbly meals -- cheese and crackers, olives, corn on the cob, hummus and pita, guacamole and chips, baba ghanouj, etc. I'll "cook" or prepare stuff earlier in the day and then we just graze around dinnertime. I also really like cold soups, like gazpacho and cucumber soup. Or a lot of times we'll just eat fruit and yogurt or homemade "ice cream".

It's finally getting a little cooler here, and not so humid, so I'm looking forward to cooking some regulation meals again!
