I just saw them at the Farmer's market here. I am dying to pick up a pumpkin and start cooking, but I can't decided what to make. I love everything I have ever had with pumpkin in it, but have never gotten any recipes. What are your favorite pumpkin recipes? <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile">

Pumpkin muffins. I don't have my exact recipe handy but it uses 1 cup pumpkin, you can find recipes all over the net.

My favorite pumpkin bread recipe comes from the Chinaberry Cookbook.<br>
www. chinaberry.com so yummy!<br><br>
1 1/2 cups sugar (I use organic sucanat)<br>
1 2/3 cups flour (I use white spelt)<br>
1/4 tsp. baking powder<br>
1 tsp baking soda<br>
3/4 tsp salt<br>
2 tsp cinnamon<br>
1 tsp cloves<br>
1/2 tsp nutmeg<br>
2 eggs, well beaten<br>
1/2 cup oil (I use coconut oil)<br>
1/2 cup water<br>
I cup pumpkin<br><br>
Preheat oven to 325. Mix all dry ingredients in a large bowl. Add eggs, oil,water, pumpkin and beat until well blended.<br><br>
Pour batter in a large buttered and floured loaf pan. Bake for 50 minutes or until toothpick comes out clean.<br><br>
Cool for 5 minutes in the pan. Remove bread onto a rack if desired.<br><br>
Enjoy!<br><br>

Thank you for posting this recipe. This is my favorite as well. I am traveling right now and wanted to make this bread but didn't have my recipe with me. I searched for it and found your post. Thank you! Making it now!
