I just saw them at the Farmer's market here. I am dying to pick up a pumpkin and start cooking, but I can't decided what to make. I love everything I have ever had with pumpkin in it, but have never gotten any recipes. What are your favorite pumpkin recipes?

My favorite pumpkin bread recipe comes from the Chinaberry Cookbook.
www. chinaberry.com so yummy!

1 1/2 cups sugar (I use organic sucanat)
1 2/3 cups flour (I use white spelt)
1/4 tsp. baking powder
1 tsp baking soda
3/4 tsp salt
2 tsp cinnamon
1 tsp cloves
1/2 tsp nutmeg
2 eggs, well beaten
1/2 cup oil (I use coconut oil)
1/2 cup water
I cup pumpkin

Preheat oven to 325. Mix all dry ingredients in a large bowl. Add eggs, oil, water, pumpkin and beat until well blended.

Pour batter in a large buttered and floured loaf pan. Bake for 50 minutes or until toothpick comes out clean.

Cool for 5 minutes in the pan. Remove bread onto a rack if desired.

Enjoy!

Thank you for posting this recipe. This is my favorite as well. I am traveling right now and wanted to make this bread but didn't have my recipe with me. I searched for it and found your post. Thank you! Making it now!
