Thank you for posting this recipe. This is my favorite as well. I am traveling right now and wanted to make this bread but didn't have my recipe with me. I searched for it and found your post. Thank you! Making it now!My favorite pumpkin bread recipe comes from the Chinaberry Cookbook.

1 1/2 cups sugar (I use organic sucanat)
1 2/3 cups flour (I use white spelt)
1/4 tsp. baking powder
1 tsp baking soda
3/4 tsp salt
2 tsp cinnamon
1 tsp cloves
1/2 tsp nutmeg
2 eggs, well beaten
1/2 cup oil (I use coconut oil)
1/2 cup water
I cup pumpkin
Preheat oven to 325. Mix all dry ingredients in a large bowl. Add eggs, oil,water, pumpkin and beat until well blended.
Pour batter in a large buttered and floured loaf pan. Bake for 50 minutes or until toothpick comes out clean.
Cool for 5 minutes in the pan. Remove bread onto a rack if desired.
