Okay bear with me, I have raging strep throat so if this question seems absurd it probably is. I hope this is the right forum for this question...<br><br>
I went to the fridge to find my strawberry banana (soy based) acidophilus probiotic liquid tasting <span style="text-decoration:underline;">fermented</span>. Did the fermentation help or hurt the probiotics? Do I have to dump it? <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/bawling.gif" style="border:0px solid;" title="bawl">

Technically, all probiotics are fermented. Probably what happened to yours is that some other culture got into it (from the air?) and is doing its thing, and so you have a taste that you associate with the idea of "fermented".<br><br>
I have an issue when I make doughs with yeast that in the time it takes it to rise it also gets infected with a culture that ferments into alcohol. So, all my doughs smell alcoholic. But, at least it bakes out (usually). I know my alcohol-producing culture likely comes from local breweries.<br><br>
There are a lot of wild cultures that will ferment things. You probably picked up one of those.<br><br>
In your particular case, since you wanted that product as a source of acidophilus, I would say that it was hurt. The other culture is taking over the territory of the acidophilus, reducing its levels. It is probably not harmful for you, but wouldn't have as much acidophilus benefit as you wanted.<br><br>
(I had this happen when my sourdough got infected with alcohol-producing culture. Over time, the alcohol levels got higher, and the sourdough culture levels got lower, until i finally threw it away. Each loaf of bread was so saturated with alcohol that it couldn't cook off, so I was feeding them to the birds.)

I did dump it and kept the nice bottle. I feel so guilty for spending over 10.00 and not using it. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/redface.gif" style="border:0px solid;" title="Embarrassment">
