I dunno if you can get them there, but we do grits for breakfast often. You can add just about anything to flavor them. Peaches is a hit in them, as well as just butter and honey. I prefer them just with a little salt and butter, myself. Peanut butter is also tasty.
We also eat oatmeal (porridge) a lot. You can add just about any fruit to oatmeal to make it new and interesting.
And we eat lots of fresh fruits, especially since that's what I've been craving this pregnancy!

I can't imagine any recipe with cabbage as being tasty, but that's my own pickiness showing through - LOL!

Our ds will eat fiber-rich foods like raisins, dried fruits, whole wheat pasta, whole grain bread with butter, cereals like Quaker's Corn Bran, mini-wheats, oatmeal, sunflower seeds, and peas (and thick pea soup).

Can't think of any cabbage recipes, other than corned beef and cabbage (which we had this weekend, but ds wasn't interested).

We don't worry about fibre too much, dd eats plenty of fruits and whole grains (and woo hooo! she's starting to get more into veggies). Cooked whole wheat pasta is a great finger food (with just a little parmesan grated on top when dd doesn't want plain pasta). WW toast with a bit of thinned nut butter spread. Nut butter or wheat germ mixed in with her yogurt. In addition to the foods listed in the above posts, Fig Newmans are pretty high in fibre. We are otherwise a no cookie household, but they aren't any sweeter than figs IMHO, and I sometimes give dd 1 or 2 as snacktime.

IIRC correctly, cabbage may cause digestive difficulities in some under 3's.

My dd has a constipation problem and I find that mixing some prune juice in with her regular juice has helped a lot. I also give her part of a Metamucil wafer (apple flavor) and she thinks they are cookies and wants more. I saw a doctor before giving her the Metamucil and was assured it was fine as long as I gave water with it.

My dd also is on a strict high fiber diet. We have tried to limit her dairy and white flour intake. If she eats white flour at people's houses, etc. we give her some fiber once she gets home. Solving this problem was the last thing that was keeping her from potty training! :)

potatoes, cooked carrots, peas and apples are good for fiber. My kids eat a lot of veggies and fruits in season- though ds won't touch a potato. And plain broccoli is good, too.
