...And I made turkey stock this weekend! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/thumb.gif" style="border:0px solid;" title="thumbs up"> 4 1/2 quarts, to be exact. Most of it is in the freezer now, but I saved some of it for a cream of potato soup which I made today and it is SO <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/yummy.gif" style="border:0px solid;" title="yummy"> The homemade stock seems to have made a big difference in the taste of the soup and it is definitely more nutritious!<br>
I just wanted to encourage anyone who's wanted to try making stock to just do it! It was really not as difficult a process as I thought it would be, and it felt really good to use up something (a turkey carcass) that I would have thrown away otherwise.

I made stock for some mulligatawny soup a few weeks ago, and you're right, it was easier than I thought it would be. The whole house smelled so good, too!
