... and it's interesting. It's funny, it has a really pleasant, sweet aftertaste... but it's not that sweet at first taste. I'm going to have to really brainstorm how to fit this in to my cooking...

I like it on top of things, or in smoothies-but especially in my kefir. I haven't baked with it.

I don't generally sweeten my kefir smoothies, but I have been using a bit of raw honey in yogurt with fresh fruit. I bet this would be really nice with that. I wonder how it would be cut half-and-half with maple syrup, in places where I usually use maple syrup like baked squash or pancakes? (I know, I know... I should be serving my pancakes with fresh fruit, not maple syrup. But I make them so rarely...) So far, having only bought it this morning, I've only tried a tiny bit in my tea.

I love agave nectar. I use to sweeten ice cream, baked oatmeal, smoothies, etc. It is supposedly lower on the glycemic index than most sweetners, which is always a good thing. And, BTW, I have no idea how it is properly pronounced but I say uh-gav-E nectar

I just got some last week. I've just started soaking oats at night and adding some ground flax seed, almond milk, fresh fruit and a little agave nectar to it after cooking it. YUM!!

I'm also curious about other ways to use it.

I see that it's low on the glycemic index because it's high in fructose. I remember reading (ugh, where?) that fructose is hard on the liver. That alone is a good reason for me to stay away from it!
