Finish for childs wooden kitchen?

I just bought a wooden kitchen made from unfinished knotty pine. Do I need to put something on it to protect the wood? I know the Elves and Angels wooden kitchens say they have a linseed oil finish. What is that? I would think I need something to protect the wood from dirty fingers and such.

We have a wooden play kitchen and I left it unfinished. There are a couple of crayon marks, but mostly the wear is from small dents and scratches. I suppose you could use a hardwax oil. We have some leftover from our floors and I plan to use it to finish the bathrooms doors as well. It is non-toxic and would be safe for kids toys. It won't save your stuff from dents and scratches, though. Good luck!
