What can I do without, without grilling it?

It's hands down the best cut for stir-fries, just make sure to slice it thinly across the the grain.<br><br>
You could also marinate it, pan fry it and slice it across the grain for yummy steak sandwiches or to put on on top of a nice green salad.

We pan fry it often, and top with carmalized onions, sauteed mushrooms, and green chiles. <img alt="" class="inlineimg" src="/img/vbsmilies/smilies/eat.gif" style="border:0px solid;" title="Eat">

I like it braised in liquid. I cook some onions, and then brown the meat right in that pan. Pour cold water on it, just about an inch in the pan, and a splash of red wine, and then add back the onions. Heat it to a simmer, and turn it down, and let it cook until the meat is very tender. It's nice with mushrooms, too, if you're into mushrooms. You can thicken the liquid afterward a bit, to make a nice sauce.

Marinate it in lime juice, garlic, cilantro spices (like paprika, chili powder, cumin) and throw it in the broiler.<br><br><br>
I don't make flank steak much because sirloin is cheaper around here (yeah it is weird but that's KC for ya <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol">)<br><br>
Serve on corn tortillas with taco type fixin's

How about cooking like you would a pot roast? I would give it a quick browning in a hot skillet and then would throw it in a roast pan in the oven with some carrots, potatoes, celery, maybe onions and some beef broth and would let it bake in the oven long and slow until the meat was tender and the veggies soft and yummy!

I didn't make it last night because it was frozen and I wanted to marinate it. So I am making it tonight.
