I was wondering if veggies that have been freezedried and rehydrated (like in a quick soup) had much nutritional value? I recently discovered these yummy soup cups, add boiling water, wait 6 minutes and its veggie soup with organic ramen noodles. I figure at the very least its "not junk food" and a quick easy lunch, but I look at those shriveled freeze dried carrots and just gotta wonder! lol.

Another one, what about things like zuchini bread, or other baked goods that incorporate vegetables? After the veggies are shredded and baked into a bread, are they still good? (Lets also assume baked from scratch with whole wheat flour and no sugar or "artificial sweeteners")
