frozen spinach

I have tons of frozen spinach that I want out of the freezer. Any suggestions as to what I could make with it?

I like lentils & rice with spinach. I've been thinking about making lentil soup with some frozen spinach lately too.
Add it to red lentil curry, or make spanakopita. Frozen spinach subs in beautifully in the recipe in Vegan with a Vengance.

Lasagna, or some other baked noodle dish.

Add it to curried tofu scramble, or eat it with fried tofu slices, fried, poached or soft boiled egg and a squeeze of lemon oer toast.
How about a spinich and artichoke dip/spread? Or a quiche. Or a white pizza with spinich. I also love love love spinich in grits.
Spinach and white bean soup
spinach and potato soup
sauteed spinach with crisped shallots and sesame seeds
Add it into couscous (or rice, as mentioned above)
cook it into a cassoulet with leeks and white beans (like the one from V'com)
sautee it with mushrooms and seitan (V'com pg 187)
mostly because I'm craving it, I think you should make Channa Saag (an indian dish: http://www.whats4eats.com/vegetables/saag-recipe)

Or you could put it in berry smoothies, I find frozen spinach works even better than fresh for smoothies.
Spinach Quesadillas
Palak Paneer if you like indian
You can saute tomatoes, onions and spinach and serve over brown rice.
I love it with kidney beans and tomato sauce and curry- an indian type meal
also spinach pancakes- even my picky boys eat em!!!
spinach and 'cheese' eggrolls- again, eaten by all!!!!!!!!!!!!!!!!!!!!!!!!!
A local mexican place has really good spinich & mushroom enchiladas. I'll be you could do that easily with frozen spinach.

We had this last night for dinner and it was YUMMY! DP and I took the leftovers for lunch today; it made a lot. The kids didn't like it that much, but for us, it was good.

I use frozen spinach in smoothies too. I keep a big gallon bag in the freezer that I put any fresh that's on the edge of going bad in and then use it in smoothies later on.

I think someone suggested this already, but you can add it to lasagna too.

I make risotto and add the thawed frozen spinach with the last batch of broth that I add to the rice. My kids LOVE it.

Thanks for all the replies. I have done a bunch of smoothies, but I like fresh best in those. I am going to try this first and add potatoes since I have a bag that is going bad.

make a big dish of spinach lasagna! that's yummy...
Pasta with spinach, tomatoes, onions and mozzarella cheese...
spinach in coconut cream...
open can of coconut milk and put on stove - season with garlic and salt/pepper or whatever you like... let cook down, add spinach straight from freezer... let cook down again. done.

My family goes nuts over this Sesame spinach recipe, even the kids who don't normally like spinach love it. If your family likes, sushi, I think you'll like this. I have to double it for our family of 4, or there isn't enough:

I make a Polenta with Parm. Cheese and spinach.
Boil broth add cornmeal small amounts at a time and wisk.
Add cheese and spinich, salt and pepper to taste. Enjoy!
One of our favorite, easy spinach meals is to saute garlic and onion with cumin and pepper and a splash of hot sauce. Add some mushrooms, a heap of black beans and the frozen spinach and cook on low heat until you're ready to serve. We eat it with brown rice, usually.
Mmm... now I wish I had a little more energy to make a real meal with spinach for dinner tonight.
saag paneer <---- it's delicious even w/o the paneer (indian cheese)
add between 1 and 2 cups (drained of course) to brownie batter. you cant taste it at all and it is good incentive to eat brownies.

cause i know everyone needs incentive to eat brownies. hehehe
